A Staple Ingredient
With autumn upon us, it is the season for warm baked apples and cider doughnuts. If you’ve ever found yourself mid-recipe only to discover you’re out of brown sugar, you’re not alone. Or, perhaps you have light brown sugar on hand while the recipe you are making calls for dark. Fortunately, making homemade brown sugar is not only incredibly simple, it’s cost-effective and customizable, and only requires two ingredients.
Simplicity & Ease
Homemade brown sugar requires only two common kitchen ingredients: granulated sugar and unsulphured molasses, you can typically find them both in the baking aisle of your local market. To make your own brown sugar, all you’ll need is:
- 1 cup of granulated sugar
- 1 tablespoon of molasses, adjusting more or less to suit your preferences
How to Make Homemade Brown Sugar
- Combine Ingredients: In a bowl, mix 1 cup of granulated sugar with 1 (or more) tablespoons of molasses.
- Mix Well: Use a fork to combine the two ingredients thoroughly until the mixture has a uniform color and texture.
- Store: Place the homemade brown sugar in an airtight container, I use a jar with a flip-lock lid. It will keep just as long as store-bought brown sugar and rarely hardens.
Convenient
Buying granulated sugar in bulk is often more economical than purchasing brown sugar, and molasses is another inexpensive pantry staple that lasts quite a long time. Making your own brown sugar also allows you to manage your supply more efficiently. You can whip up a fresh batch, of light or dark brown sugar, whenever you need it.
Adaptable
One of the biggest advantages of making your own brown sugar is the control it gives you. Need light brown sugar? Simply use less molasses. Looking for a richer, more robust flavor? Add more molasses. Need a drier brown sugar that’s less heavy? Just add more granulated.
The ratio might look something like this:
- Light Brown Sugar: 1 cup of granulated sugar to 1/2-1 tablespoon molasses
- Dark Brown Sugar: 1 cup of granulated sugar to 2-3 tablespoons molasses

Ingredients
- 1 cup granulated sugar
- 1-1½ tbsp molasses, unsulphured see notes
Instructions
- Mix sugar and molasses together with a fork, pressing and mixing for a few minutes until it all comes together and there are no clumps of molasses. Start with 1 tablespoon of molasses and go from there to adjust to your preferences. Store in an airtight jar or container.
